Challah Demo #3—Pretzel Challah
We’re about two weeks away from the Great Big Challah Bake on November 5th! If you’re anywhere near as excited as we are, you can hardly wait! Need to channel your excitement? Pretzel challah
Ingredients:
For challah:
2 tbsp yeast
½ cup warm water
1 teaspoon sugar
1/3 cup oil
1/3 cup sugar
1 egg
5 c flour
One cup boiling water
2 teaspoons salt
For baking soda bath:
4 quarts of water, boiling, in a pot big enough to fit your challah
1/2 c of baking soda
For egg wash/finish:
1 egg, beaten with 1 tbsp water or milk
Coarse kosher salt for sprinkling!
Instructions:
Proof yeast in the 1/2 cup of warm water and add a teaspoon of the sugar.
Add oil, sugar, and egg—mix together!
Add five cups flour, one cup of boiling water, and salt, and knead!
Let rise until nearly doubled in size, then braid your challah into your preferred shape.
Let rise for about half an hour.
Follow along with Giti in the video at this point! After your challah rises for the second time, you’ll be ready to put it into the baking soda bath for 30 seconds on each side.
After your challah has taken its bath, finish it with the egg wash and pretzel salt to taste.
Bake for 35 minutes at 350 degrees and enjoy!
